1 Baguette (Sliced)

300 g Mixed Mushrooms (Sliced)

1 tbsp Olive Oil

1 Garlic Clove (Minced)

1 Knob Of Butter

1 Fresh Thyme Sprig

Sea Salt & Black Pepper

Goats Cheese
The Garnish

Parmesan Cheese
-
Fresh Parsley


Mushroom & Goat's Cheese Crostini
- Heat a frying pan to medium, add olive oil
- Add mushrooms and garlic, cook for 1-2 mins
- Add butter, thyme and salt & pepper, cook until tender and excess liquid has evaporated
- Heat another pan (or use oven on high heat) to medium/high
- Drizzle sliced baguette with olive oil
- Grill or bake until golden brown
- Spread a healthy layer of goats cheese onto each crostini
- Top with warm mushroom mixture
- Garnish with grated parmesan cheese and fresh chopped parsley
- Enjoy!
