Ingredients
  • 60 g Egg whites
  • 100 g Dark brown sugar
  • 20 g Date molasses
  • 180 g Unsalted butter
  • pinch salt

Date molasses Swiss meringue buttercream

Total 30 minutes
  1. Place the egg whites, sugar and molasses in a bowl above a Bain marie. Stir constantly until a digital thermometer reads 60℃ or the sugar is dissolved.
  2. Transfer to a stand mixer with whisk attachment and whip on medium-high speed until the bowl is then cool to touch.
  3. Switch to a paddle attachment on a low speed and add the softened butter a tablespoon at a time. Add a pinch of salt.
  4. Turn the speed up to medium-high and whip for 5 minutes. It may look like it has split but it will come back together.
  5. It is now ready to decorate a cake with.
