  • 8 chicken drumstick/thighs
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp ground cumin

  • 1 tbsp black pepper
  • ½ tbsp cinnamon
  • ½ tbsp nutmeg
  • 2 tbsps smoked paprika
  • 200 g all purpose flour
  • 2 eggs

All your usual jerk flavours, just fried instead of grilled!

Jerk chicken is one of the most famous exports from Jamaica. It’s sweet, spicy and smoky!


Caribbean cooking is all about layering herbs and spices together. The main ingredient in jerk is plimento seeds (or allspice) which gives it the unique flavour.


Big bold flavours that are usually marinated overnight (or 4-6 hours minimum) for maximum impact to the taste buds! This is a blend that I use and find to be very effective, especially since it’s fried and not grilled.

  1. After you’ve cleaned the chicken apply all of the seasoning and left to marinate.
  2. Using the same ingredients for the rub add the same measurements to the all purpose flour and mix together 
  3. Create an egg mix by beating 2 eggs, dip chicken in egg mix and then fully cover and pat in flour. 
  4. Using either a deep fat fryer or high sided frying pan, allow the oil to get to 150℃
  5.  Fry chicken for approx. 8 minutes (4 mins on each side if using fying pan)
  6.  Once golden, put it in the oven at 200℃ for approximately 10-15 mins to finish off cooking. 
  7. Make a meal out of it and enjoy with either rice or fries.
