Jody Spencer's BBQ'd beef with chimichurri slaw
Spiced beef steaks with a punchy chimichurri slaw full of flavour

For the steaks
  • 4 Beef Steaks
  • ½ tsp Dried Chilli Flakes
  • ½ tsp Dried Cumin
  • 2 tbsps Vinegar
  • 2 tbsps Dijon Mustard
  • 2 tbsps Runny Honey
  • 4 tbsps Oil
  • Salt and Pepper
For the slaw & chimichurri mayo
  • ¼ Green cabbage, shredded
  • ¼ Red cabbage, shredded
  • 1 Red onion, finely sliced
  • 2 Small carrots, trimmed, peeled and grated
  • 2 Egg yolks
  • 2 Cloves of garlic, crushed
  • ½ tsp Smoked paprika
  • ¼ tsp Cumin
  • Good pinch of chilli flakes
  • Cup of oil
  • 2 tbsps Red wine vinegar
  • Salt and Pepper
  • 1 tbsp Parsley
  • 1 tbsp Coriander
  • 1 tbsp Mint
  1. In a bowl, mix together the ingredients to marinate the beef steaks. Add the steaks and leave for at least 30 minutes.
  2. Meanwhile, make the slaw: add all the vegetables together and give it a good mix.
  3. In a separate bowl, whisk the egg yolks together. Add the crushed garlic, spices and chilli flakes.
  4. Whisk in half the oil, then half the vinegar. Add the remaining oil, then add as much vinegar as you like to taste.
  5. Season with salt and pepper. Stir through the herbs. (This can also be made in a small food processor if you have one, using the same method. Add the oil slowly while the motor is running.)
  6. Stir the vegetables through the chimichurri mayo.
  7. Cook the beef steaks on a hot barbecue to your liking.

Testicular Cancer is the most common cancer in young men and responsible for approximately 2,400 new diagnoses in the UK every year. This is most prevalent in men aged between 25 – 49 years but, crucially, more than 98% of men who get Testicular Cancer will be cured.

We are working with Chefs, Food Writers and supporters to help us create an online It’s in the Bag Digital Cookbook - a collection of Recipes and Blog posts.  We hope that this will initially build engagement with our community to encourage regular self-checking for testicular cancer. We believe that this may help to support men and their families who have been diagnosed with testicular cancer (germ cell) who are going through treatment.  We provide hands-on support for men with testicular cancer in the South-West, as well as raising awareness of the disease across the region and beyond.

It’s in the Bag is run by a group of testicular cancer survivors with support from specialist NHS staff. We have three simple aims:   

Support - being diagnosed with testicular cancer and going through treatment is a huge challenge – physically, mentally and emotionally. We provide a range of activities and initiatives to help men through this tough time.     

Awareness - we teach men the importance of checking their balls regularly and taking any issues straight to their GP. Spreading this knowledge promotes earlier diagnosis, which often means simpler, more effective treatment and better chances of a cure.       

Survival - with UK cure rates for testicular cancer running above 98%, we focus on survival – helping guys tackle the emotional and practical impact of cancer, both during treatment and beyond.

As well as improving the well-being of hundreds of the South-West’s testicular cancer patients, we’ve reached thousands of young men with a view to getting them to do that one most important thing - check your balls!

In 2012, we won the QIC ‘Cancer Charity Initiative of the Year’ award in recognition of the real impact our support activities are having on patients’ quality of life and in 2015 we won Campaign of the Year in the Bristol Post health and care awards.
