Ingredients
Curry Paste
  • ½ Onion, diced
  • 2 tbsps Fish sauce
  • 2 Thin green chillies (more if you like it hot)
  • 2 Lemongrass stalks
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 2 tsps Minced garlic
  • 2 tsps Minced ginger
  • 2 Limes, zest and juice
  • 50 g Bunch of coriander, stalks included
  • 2 tbsps Olive oil
Thai Green Chicken Curry
  • 1 kg Skinless, boneless chicken thighs
  • 400 g Coconut milk
  • 3 g Kaffir lime leaves
  • 1 Bunch of thai basil
  • 100 g Mange tout
  • 100 g Green beans

With homemade curry paste

  1. Add all the ingredients for the curry paste into a food processor and blitz until smooth.
  2. Cut the chicken thigh fillets into strips, pan fry until browned all over.
  3. Take the chicken out of the pn and set aside onto kitchen paper. Clean the pan.
  4. Add the curry paste into a dry pan and cook to release the flavours. Add the coconut milk.
  5. Put the chicken back into the pan along with the lime leaves and simmer for 10 minutes.
  6. Add the green beans and mange tout and simmer for another ten minutes. Add a splash of water if the sauce becomes too dry.
  7. Add chopped thai basil before serving.
  8. Serve with thai jasmine rice and some lime wedges.

I was taken on by Jamie Oliver, eventually started my own business and now find myself catering for royals and celebs. I use my love for food to spread joy and help others find purpose and change their lives. I mentor youngsters who have been in trouble with the law and regularly go back into prisons to share my experiences. I find myself being in a very fortunate position where I am able to do something I really love AND get paid for it!
