Cheesy Truffle Lobster Pasta

Here’s some decadence for you... Mafalda pasta coated in a luxuriously creamy sauce made from Brindisa’s Truffle Pastura cheese… earthy black truffle notes and delicious creamy, mushroomy flavours… add to that chunks of sweet lobster meat… a match made in heaven!

  1. Preheat oven to 180℃ 
  2. Cut the truffle pastura cheese into small pieces
  3. Heat a pan on medium high heat with a little olive oil, add garlic, cook for a minute
  4. Add butter, once melted whisk in flour, cook for a minute 
  5. Add cream and milk, keep whisking 
  6. Add onion powder, paprika, garlic powder, cayenne pepper and truffle powder if using
  7. Stir in cheese and the lobster meat
  8. Taste, adjust salt, pepper and seasonings as desired
  9. Cook pasta less 2 minutes until al dente
  10. Drain and reserve some pasta water to loosen the sauce if needed
  11. Pour the cooked pasta into the cheese sauce, mix well
  12. Add pasta water to your desired consistency
  13. Mix topping ingredients together, set aside
  14. Tip the pasta into an ovenproof baking dish, sprinkle over the topping 
  15. Bake for 20-25 minutes until golden
  16. Enjoy!
