INGREDIENTS

  • 1 handful of fresh coriander.
  • the juice of 2 limes.
  • 2 avocados
  • 3 spring onions, roughly sliced.
  • 1 small red or white onion, roughly diced.
  • 6 cherry tomatoes, roughly chopped.
  • ½ tsp ground cumin.
  • 2 garlic cloves, crushed.
  • chilli flakes or jalapeño, roughly chopped to taste (optional).

Guacamole, I love the stuff and I can’t get enough of it. You can have it on its own with lots of tortilla chips and cold beers, with fajitas, with chilli con carne or on top of a burger

  1. Place all the ingredients apart from the avocados into a food processor and whiz for 30 seconds just to break everything down a little.
  2. Add the avocados to the rest of the ingredients and whiz again to your desired consistency. Check for seasoning serve with tortilla chips and lots of cold beer.
