Ingredients
  • 80 ml Grapefruit Juice, freshly squeezed, plus more grapefruit for garnish
  • 20 ml Lime Juice, freshly squeezed
  • 50 ml Tequila
  • 20 ml Triple Sec (I used Cointreau)
  • Clear Honey, to taste
  • Flakey Salt
  • Crushed Ice (cubed is fine)
  • 1 Sprig of Fresh Thyme, to garnish

  1. Freshly squeeze your grapefruit and lime and measure out the correct quantities of their juice. Combine with the tequila and cointreau. Add a squeeze of honey to achieve your preferred sweetness and shake or stir well.
  2. Scatter some flakey salt onto a plate and run a lime wedge around the rim of your cocktail glass, then dip this into the salt so that the entire rim is covered.
  3. Fill your salt-rimmed glass up with crushed ice then pour over your cocktail mix.
  4. Garnish with a grapefruit slice and a sprig of fresh thyme.
