  • 500 g lamb mince
  • 1 large onion
  • 1 carrot peeled and diced
  • 6 slices bacon chopped
  • 3 cloves garlic minced
  • 100 ml red wine
  • 1 tin chopped tomatoes
  • 1 tbsp tomato puree
  • 1 bunch chopped parsley
  • 1 bunch chopped basil
  • 1 bay leaf
  • 1 tsp dried oregano
  • 1 tsp nduja paste
  • Crumbled feta
  • Pappardelle pasta

Lamb Ragu

This is a great big hug in a bowl kind of dish, this will not disappoint!


  • In a hot pan add the lamb, carrots, onion, garlic and herbs, brown all for around 10 mins
  • Add the wine and allow to reduce down to half its quantity
  • Add in tomatoes and tomato puree and nduja paste, put on a lid and allow to simmer for two hours
  • Cook your pasta as per pack instruction and serve with crumbled feta
