Ingredients
  • 400 g Self Raising flour
  • 4 tbsps Honey
  • 3 Eggs
  • 200 g Butter
  • 5 Various Flavour jelly
  • 150 g Berries mixed ( strawberries, blackberries, blueberries, raspberries
  • 400 ml Sour Cream
  • 150 g Sugar ( brown, or can use Honey to reduce processes sugars level)
  • 15 g Baking Powder
  • 15 ml Vanilla Extract
  • 20 g Lemon Zest
  • 20 ml Lemon juice

Honey Cake with colourful jelly and berries

Traditional Home Made Honey Cake, no one truly knows till this day where this delicious cake originates from. Many speculate it has come from far east, although ingredients used resemble more of the Eastern European cuisine more than anything.


I personally grew up with eating this cake and watching my mum or Nan preparing it for Birthdays, Christmases or other special occasions.


The one truly amazing fact is that although we all ate this incredible cake, including most of our relatives and friends, none of us ended up gaining any weight. So , I guess this is a great option for those who watching their weight, and trying to eat just that tiny bit healthier.


I hope you enjoy this recipe and the end result just as much as I do.


Prep 3 hours
Total 12 hours

1.Melt butter and honey ( I placed a pan half full of water on a medium heat, on top of the pan I placed deep glass bowl) you will be mixing butter and honey in it, it will be slowly melting from all the steam at the bottom of the bowl, once the water has boiled.

2.Mix eggs with vanilla extract

3.Add eggs mixture in to butter mix

4.Take of the heat and start adding flour which already been mixed with baking powder. Mix very fast so prevent lumps from appearing in the dough.

5.Work the dough by adding little more flour if needed so the dough would not stick. Pop the dough in to a bowl and in to fridge for 30-40 min.

6.Split the dough in to 11 balls.

7.Take one ball and start rolling, then use a plate or any other shape to trim the dough. Repeat with all the balls. Keep the trimmings for last. Those will be left to bake for later to cover cakes surface. So will need to be blended.


Cream making Process :

in to sour cream add caster sugar lemon zest, lemon essence and mix well, then refrigerate for 20 min.

Once cake layers cool down start making a cake.

Pop first layer and add sour cream covering the full surface. Add fresh mashed raspberries and jelly. And repeat with each layer.

Cover the sides and top of the cake with the cream and pop cake in to the fridge for at least 8 hours before decorating.

After 8 hours use your imagination


I have decorated my cake with Fresh Flowers, berries and some Russian Soft Meringue.
