Coconut Chocolate Oatmeal Squares

We're coo coo for coconut squares!

These Coconut Chocolate Oatmeal Squares really do hit the spot. They are crunchy, nutty, and have the right amount of sweetness. The best part about them is that you can personalize them to your preferences and add whatever you want. We even debated adding in butterscotch chips, to which we both agreed would be a little too much (even though Jordan still wanted them). Either way, these are easy to make and adapt, and fantastic for a quick breakfast or late night snack.

  • ½ Cup all purpose flour
  • ¼ Cup whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ Cup melted coconut oil

  • 2 tsps vanilla
  • ½ Cup shredded unsweetened coconut (plus extra for topping)
  • ¼ Cup semi-sweet chocolate chips (plus extra for topping)
  • ¼ Cup pecans, chopped

  2. In a medium bowl, mix together all the dry ingredients (oats, flours, baking soda, salt)
  3. In a large bowl, whisk together wet ingredients (oil, eggs, sugar, vanilla).
