Ingredients
  • 1 large fillet of prime cod
  • 1 small onion, finely sliced
  • 2 cloves of garlic, finely sliced
  • 1 tin of chopped tomatoes
  • 200 ml vegetable stock
  • a pinch of dried oregano
  • a splash of white wine
  • 1 jar of cooked gigantes beans
  • a few kalamata olives
For the whipped feta
  • 50 g feta cheese
  • 2 tbsps thick Greek yoghurt
  • a drizzle of extra virgin olive oil
  • a squeeze of lemon juice
  • seasoning

A wonderful Mediterranean fish stew with gigantes beans, tomatoes, olives and feta!

There's nothing quite like a succulent piece of white fish in a rich tomato sauce. Add in some lovely gigantes beans (Greek baked beans), Kalamata olives and a dollop of whipped feta and you have yourself a dinner that looks as if it just came out of some little kitchen on a Greek island somewhere! If only....

  1. Heat some olive oil in a pan and when it's hot, add in the onion and garlic and gently fry for a minute or so. Then add in the tomatoes, stock, oregano and white wine. Heat to boiling point and immediately reduce to a slow simmer for about ten minutes
  2. In the meantime, brush the cod with olive oil and season well. Heat a little oil in a seperate pan and pan fry over a moderate heat for ten minutes or so (depending on its thickness), until it's nicely browned and just cooked through. Whislt it's cooking, put the whipped feta ingredients into a bowl and whip until smooth. Adjust quantities for the consistency you want
  3. Finally, add in the beans and the olives. Continue to simmer for another minute or so and then add in the fish. Finish with a good dollop of the whipped feta and a little freshly chopped dill. Break up the fish into a few big chunks and serve with some crusty bread
