Ingredients
  • 500 g prime fillet of scottish salmon (equivalent to four individual fillets)
  • 200 g basmati rice
  • 1 tin of chickpeas
  • a little harissa paste or chilli flakes
  • 12 mixed seasonal tomatoes
  • a few dollops of Greek yoghurt
  • a handful of flaked almonds
  • a small bunch of oregano, corinader or parsley
  • 500 ml vegetable stock
  • a pinch of saffron
  • 12 dried apricots
for the spice mix
  • 1 tsp ground cumin
  • 1 tsp ground corinader
  • 1 tsp turmeric
  • 1 tsp ground cinnamon
  • 1 tsp allspice
  • 1 tsp paprika
  • 1 tsp ground ginger
Moroccan Style Salmon Tray Bake with Apricots and Almonds
An easy one tray family meal with all those fabulous Moroccan flavours!

This is a fabulous prime fillet of scottish salmon, which I cut in two, but it was enough for four! So easy to prepare, easy to cook and, if you're a fan of Moroccan style dishes, this is truly sublime!

  1. Start with your vegetable stock in a large jug and add in the saffron and all the spices. Mix well and then transfer to a pan. Bring to the boil and parcook your rice for just five minutes
  2. Then transfer the contents of the pan to a high sided baking dish and add in your salmon. Brush with a little harissa paste and seaosnal well
  3. Finally add in the (drained) chickpeas and tomatoes and bake in a hottish oven (180 ish) for about 15/20 minutes, until the salmon has just cooked through. Remove from the oven and finish with the yoghurt and a sprinkling of the almonds and fresh herbs
