Creamy, spicy Gnocchi

Try this recipe with some crumbled sausage meat added at the garlic and chilli stage!

ingredients
  • 2 Red chilli finely chopped
  • 5 cloves garlic finely chopped
  • 3 tbsps Olive oil
  • 400 g peeled plum tomatoes
  • 250 g Mascarpone
  • 500 g Fresh gnocchi
  • 1 tsp Oregano
  • salt and pepper
  • 150 g Grated parmesan
  • 1 Small bunch basil for serving
  • 1 Small pack chopped cherry tomatoes

Creamy, spicy Gnocchi

Try this recipe with some crumbled sausage meat added at the garlic and chilli stage!

  1. Bring a pan of salted water to the boil
  2. In a separate pan heat the olive oil on a medium heat and fry the chilli and garlic for a minute until fragrant and soft.
  3. Add your chopped fresh tomatoes and sauce for a further minute.
  4. Add the tinned tomatoes and rinse the tomato tin with water and add this to the sauce
  5. Season with salt, pepper and oregano. Reduce the heat and simmer for 25-30 minutes.
  6. Check for seasoning and then add your mascarpone. If the sauce is too thick add a splash more water.
  7. Add the gnocchi to the boiling water, as soon as it floats to the top it is ready.
  8. Drain and add directly to the sauce.
  9. Add half the parmesan and mix well.
  10. Serve and sprinkle with the remaining parmesan cheese and basil
