Ingredients
  • 1 can of tuna
  • 1 cucumber, peeled and sliced
  • 1 small mango, cubed
  • ½ sweet onion, diced
  • 2 stalks of celery, chopped
  • 2 tbsps hemp hearts
  • optional: add ½ cup of cooked quinoa for a more filling salad. This one was without but still quite filling
For the dressing:
  • 3 tbsps olive oil
  • 1 tsp chopped parsley
  • 1 tsp mustard
  • 3 tbsps white balsamic vinegar (you can use apple cider vinegar)
  • ½ tsp salt

Combine all of the ingredients and whisk together dressing in a cup using a fork. Pour over salad and mix.  Letting it sit for 10 minutes before serving will intensify the flavours.
