  • 2 nests of medium egg noodles (or to suit your hunger levels)
  • drizzle of sesame oil
  • 1 small carrot, peeled and cut into matchsticks
  • 3 garlic cloves, finely sliced
  • 1 small red chilli, finely chopped (not a chow mein essential, but a great addition!)
  • glug of groundnut oil
  • 150 g uncooked prawns
  • 1 good handful of mangetout
  • 1 handful of beansprouts
  • 2 tbsps rice wine (or sherry)
  • 2 tbsps soy sauce
  • sprinkling of spring onion slices, to serve
Chilli Prawn Chow Mein
The classic Chinese noodle dish that has everything you need in it for a hearty, healthy meal.

If you’ve got your bits and pieces ready prepped, this is all made in one pan and ready to eat in little more than 10 minutes! Quick, easy and so delicious! The perfect Saturday night fakeaway!

  1. Cook noodles according to package instructions. Drain, transfer to a bowl and toss with some sesame oil – enough to coat the noodles 
  2. Meanwhile, prep your veg... peel and cut the carrot into matchsticks, finely slice the garlic cloves, and finely chop the red chilli. Heat a wok over hottish heat. Add the veg and fry for a minute or so, before adding a small pack of large uncooked prawns. Continue to fry for another couple of minutes
  3. Add the mangetout, beansprouts and drained noodles, along with the rice wine and soy sauce. Reduce the heat to medium for another minute or so. Season to taste, and serve immediately with the spring onion slices
