Ingredients
  • 250 g Dried Fusilli (or any other pasta)
  • 1 tbsp Olive Oil
  • 1 Onion (finely diced)
  • 2 Garlic Cloves (finely diced)
  • 1 Small Bunch of Fresh Parsley (finely chopped)
  • ½ Lemon (Zest & Juice)
  • 100 ml Dry White Wine
  • 1 Salmon Fillet (skin removed)
  • 200 g King Prawns
  • 100 ml Double Cream

Prep 30 minutes
Total 30 minutes
  • Fry off the Onion & Garlic in the Olive Oil over a low heat until the onion is soft & sweet then add 1/2 the Parsley & the Lemon Zest & cook for 1 more minute.
  • Meanwhile, cook your pasta to packet instructions.
  • Cut the Salmon into chunks & fry it off until cooked then break it up into flakes with a spatula.
  • Add the White Wine & reduce by at least half then add the Lemon Juice, Cream, lots of Black Pepper & a pinch of Salt.
  • Cut the Prawns into 3rds then add to the sauce & cook until pink.
  • Drain your Pasta, reserving about a ladle of the pasta water.
  • Add the Pasta to the Sauce then add a little pasta water at a time to loosen the sauce to your preferred thickness.
  • Serve onto plates & sprinkle with the remaining Parsley & a slice of lemon ( if preferred)
