Ingredients
  • 1¾ cups all purpose flour
  • 2 ripe bananas
  • ½ cup brewed coffee (not boiling hot)
  • ½ tsp baking soda ⁣
  • 1 tsp baking powder ⁣
  • 2 eggs (I used organic ones) ⁣
  • 2 tsps muscovado sugar ⁣
  • ½ cup chocolate oat milk⁣
  • 1 tsp apple cider ⁣vinegar
  • 2 tbsps coconut oil

Coffee and Banana Sheet Cake

This sheet cake is adapted from my original recipe, this time spiked with black Italian coffee and slightly sweetened with ripe bananas and chocolate oatly. It doesn't require much effort, and is a simple treat to put together.


  1. Preheat the oven to 180℃. Lightly grease a sheet pan (either a 1/4 sheet - 7×11 or 1/3 sheet – 9×13) ⁣
  2. In a large bowl, start by mashing the two bananas, add the baking powder and soda, followed by the eggs. Give it a good stir
  3. Mix in the sugar, then the oil, and apple cider vinegar
  4. Add the chocolate oatly then the coffee
  5. Finally, fold in the flour, and mix until well combined
  6. Place the batter into the sheet pan and lay the fruit over the top, leave a little space in between each piece ⁣
  7. Bake for around 20-25 minutes. I started with it on the middle shelf for 10 minutes using just the bottom heat of the oven. And another 10-15 minutes with the heat set for the whole oven, until cooked through ⁣
