  • linguine for two
  • small pack of asparagus
  • tub of 50/50 crab meat (white and brown meat)
  • handful of pistachio nuts
  • half a small bunch of parsley
  • 3 tendersteam brocolli spears
  • handful of grated parmesan

Crab and linguine - a match made in heaven!
Crab and Asparagus Linguine Crab and Asparagus Linguine

This is summer on a plate with delicious fresh crab meat and seasonal asparagus! The twist here is the pistachio nut topping that finishes this off... a bit like a pesto, but with a real crunch to it!

  1. Start with the linguine and follow the instructions on the pack for quantities and cooking time. Whilst its cooking, make the crunchy nut topping with the nuts, parsley and the ends of the brocolli spears... all in a hand blender and blitzed until roughly chopped
  2. Then, trim the asparagus, slice each one into two and steam for a couple of minutes. Drain, refresh in cold water and set aside
  3. When the linguine is ready, pour away most of the cooking liquid, leaving just a little at the bottom of the pan and add in the Parmesan and the brown crab meat. Season and mix it all together before adding in the whits crab meat and asparagus. Rretunr to the heat to warm it all through and finish with the crunchy nut topping and a drizzle of virgin olive oil
