  • 60 g Self Raising Flour

Sweetcorn Curry Fritters

These little fritters are one of the quickest and tastiest snacks you'll make, they are soft, crispy, Indian infused and have crunch from the corn then with a sweet chilli sauce to dip in, it's a no -brainer.


The curry paste I used in this recipe was balti paste, but you could use tikka masala, rogan josh or even just use a tsp of curry powder.

Total 10 minutes
  1. In a food processor, add the flour, eggs, curry paste, spring half of the spring onions, coriander (if using), salt and half of the sweetcorn and blitz for 5-6secs until you have a thickish wet mixture. Pour into a mixing bowl and add the rest of the sweetcorn and spring onion, stir through to combine.
  2. Heat a large non stick frying pan over medium/high heat and add the olive oil, once hot enough add big tablespoon's of the mixture to the pan and fry for 1min each side, once cooked remove and place on a plate, repeat for all. Once all done, garnish with spring onion, chilli (optional) and serve with sweet chilli sauce. Enjoy
