Ingredients

6 eggs

½ cup non dairy milk

large handful spinach (chopped)

½ yellow pepper (chopped)

½ cup garden peas

¼ white onion (roughly chopped)

1 tsp heaped dried basil

2 tsps virgin olive oil

sprinkle cayenne pepper

fresh ground pepper

salt for tasting


Baked Vegetable Frittata
This frittata is light and fluffy and packed with vegetables. This dish is very versatile and can be adapted as you wish. I made this dairy free, but you can always grate some pecorino or parmesan into the mix, or experiment with the veg by using broccoli, cauliflower, etc. It's delicious dipped with some chilli sauce!
- Preheat the oven to 200℃
- Line a medium round baking dish with parchment paper
- In a bowl, whisk the eggs together, stir in the milk. Followed by the rest of the ingredients. Combine well then place into the baking dish
- Bake for 30 to 35 minutes until cooked through. I started by setting the bottom heat of the overm baking the frittata for 10 minutes, followed by changing the setting to the full oven for the rest of the baking time)
