Ingredients
  • 1½ Cups cooked rice (I used a wild rice blend)
  • 2 cloves garlic
  • ¼ Cup olive oil
  • 2 Cups kale/broccoli slaw (you can use any vegetable of your choice, make sure it’s shredded or sliced finely so that it will cook quickly)
  • 1 small chicken breast, sliced into thin strips
  • 1 Cup raw shrimp (I cut each one into quarters but you can leave them whole)
  • 2 eggs
  • ¼ Cup soy sauce (or you can use coconut sauce for less sodium)
  • Salt to taste

First boil your rice separately according to package instructions.

Add the olive oil and garlic to a deep saute pan.  Cook on medium heat for 1 minute.  Add your greens and cook for another 4 minutes until they begin to wilt. 

Add the chicken and cook for another 4 minutes.  When the chicken starts to brown, add your rice and soy sauce.  Combine everything together and cook for 3 minutes. 

Add your shrimp and when they begin to turn pink, push everything over to one side.  Beat 2 eggs and drop it into the other side of the pan.  When they begin to thicken, take your spatula and break them up like a scramble.  Mix it with the remainder of the rice. Add chili flakes, more soy sauce and salt if needed.  Enjoy!
