Air fryer Chicken milanese and pasta sauce

I bought an Air fryer and I am hooked!!! I have made my favourite family dinner - chicken Milanese with pasta pomodoro! I wanted to take the 'fat' out of frying and make it a little lighter on the hips and I wanted to make it all in the air fryer.... and I did just that! 20% off tower air fryer using code AIRFRYER20

Butterfly the chicken breasts and place between two sheets of cling film and flatten with a rolling pin to the thickness of  4mm

Prepare 2 separate bowls . In the first bowl whisk the 3 eggs and 2 tbsps of olive oil, chopped parsley and 2 grated cloves of garlic. 

In the second bowl add the panko with 40 g of the Parmesan and salt and pepper, and the Zest of one lemon. 

Dip the chicken into the egg mixture then into the breadcrumbs,make sure the chicken is completely coated. If any parts look bare dip them back into the egg and breadcrumbs again. 

Place the breaded chicken onto the the air fryer rack and spray generously with a cooking spray. 

On a separate airfryer baking tray (solid tray with no holes) add the cherry tomatoes,basil,crushed garlic clove and dried oregano season well with salt and pepper and the remaining olive oil. 

Place both the trays in the air fryer at 180.c for 15 mins. While the chicken is in cook your pasta in boiling salted water, drain and return to the pan. 

After 15 mins turn the chicken over and spray with more spray oil and increase the heat to 200.c and cook for a further 5 minutes until the chiken cooked completely and is golden brown. 

Take the burst tomatoes and toss through your cooked pasta with Parmesan.

Serve the chicken and pasta and give a good sprinkle of fresh Parmesan serve with a lemon wedge and enjoy.
