  • 1 large trout, gutted
  • 1 lemon, sliced
  • 1 small bunch of dill, roughly chopped
  • 1 pack of fresh asparagus, trimmed
  • 4 tbsps garlic butter (homemade or fresh ready made)

A beautifully simple fish dish, that you can prepare in less than 20 minutes! Super tasty, as healthy as you can get and makes a perfect mid week meal as well as looking stunning as a dinner party piece!

  1. Fill the cavity of the trout with most of the slices of lemon, sprinkle with the dill, reserving a little for serving and drizzle with olive oil. Lay the remaining lemon slice/s on the grill pan and grill under a moderate heat for around 10 mins, until the skin is nice and crispy (you dont need to turn over... the heat will cook it through)
  2. In the meantime, melt 2 tbs of the garlic butter (you can of course make garlic butter very easily, but this was a ready made fresh butter) in a shallow pan and add in the asparagus. Toss in the butter and allow to cook through for just a couple of minutes, so they remain quite firm
  3. Finally, transfer the trout to a serving platter, add the asparagus on the side, sprinkle with the leftover dill and serve with remaining butter to melt over the trout!
