  • 2 medium chicken breasts
  • 6 slices of smoked streaky bacon
  • 2 medium sweet potatoes
  • 285 g frozen broccoli
  • 1 clove garlic, chopped
  • 1 tbsp salted butter
  • 1 tbsp olive oil
  • low calorie cooking oil spray
  • salt & pepper
  • 1 tsp paprika
  • 1 tsp chilli flakes

Bacon-wrapped Chicken with Sweet Potato and Garlic, Chilli Greens

Total 40 minutes
  • Preheat the oven to 200 degrees (fan) and boil the kettle
  • Using 3 strips of bacon per chicken breast, carefully wrap each one tightly around the chicken, starting the next strip where the last one finished
  • Add the chicken to an ovenproof dish lined with baking foil, then spray with low calorie cooking spray
  • Pop the chicken into the oven and set a timer for 20 minutes
  • Next, cut your sweet potato into slices approx. 1 cm thick. Add them to your air fryer basket* and spray with low cal cooking oil spray, then a sprinkle of salt, pepper and paprika. Set the temperature to 200 degrees and cook for 10 minutes
  • Now, add your frozen broccoli to a pan with boiling water, and boil for 10 mins on a low to medium heat. Drain, then lay out on a chopping board
  • Check the sweet potato, give them a shake and another little spray of cooking oil, then return to cook for a further 5 mins
  • Add the olive oil, butter, chopped garlic and chilli flakes to a pan and bring to heat
  • Slice the broccoli lengthways and add to the hot, buttery pan then leave on a medium heat for 5 mins
  • Turn the broccoli over to ensure it’s fully coated in the pan mix, then remove from the heat until ready to serve
  • Once your timer for the chicken has gone off, switch to using the grill for a final 5 minutes to crisp up the bacon
  • Remove the chicken from the oven and rest on a chopping board, before slicing into 3.
  • Remove the sweet potato slices from the air fryer and lay out onto your plate
  • Add the broccoli from the pan
  • Lay the chicken slices across the top and serve
