‘Nduja & prawn orzo skillet bake

This spicy ‘nduja and prawn orzo bake is all cooked in one pan in around 30 minutes - perfect for a weeknight meal that tastes amazing.

  1. Preheat the oven to 200 celcius. Heat a tablespoon of oil in the skillet on a medium heat. Add the onions, cook for 5 minutes until starting to soften, then add the garlic and red pepper. Stir and cook for 5 more minutes. Add the tomatoes and cook down for 5 minutes until starting to burst and release their juices. 
  2. Add the orzo to the pan. Stir the tomato purée into the stock and add to the pan. Stir well. Add to oven for 15 minutes. 
  3. Remove from oven. Arrange the prawns on the top of the bake, followed by little dollops of ‘Nduja. Return to the oven for 10 - 15 more minutes until the stock has been absorbed and the prawns are cooked through.
  4. Season to taste. Garnish with parsley and serve!
