1/ Cut the chicken thighs into thirds or quarters depending on their size so that they are roughly the same size.
2/ Mix all the other ingredients together in a small bowl until they combine into a paste.
3/ Put the chicken into sealable freezer bag, add the paste in, seal the bag and move it all around until the chicken is evenly covered. Leave marinating in the fridge for at least a few hours but anything up to 24hrs.
4/ Remove from the fridge about half an hr before you want to cook to come up to room temperature.
5/ Pre-heat the oven to 200℃ . Place the chicken on a roasting tray, spreading it out so the pieces lay next to each other rather than on top of each other.
6/ Cook on the top tray of the oven for 35-40 mins.
