INGREDIENTS

  • 6 Boneless Chicken Thighs
  • ½ Large Brown Onion (finely sliced)
  • 4 Pureed Garlic Cloves
  • 3 tbsps Red Curry Paste
  • 2 tbsps Garam Masala
  • 4 tbsps Tomato Paste
  • 1 tsp Cayenne Pepper
  • 1 tsp Tumeric
  • 2 tbsps Smoked Paprika
  • 1 Can of Coconut Milk
  • 300 ml Greek Yoghurt
  • 6 tbsps Salted Butter
  • 1 Small handful of toasted Almonds to garnish
  • Fresh Coriander to garnish
  • 15 ml Olive Oil
  • Salt and Pepper to taste

Slow Cooker Butter Chicken

Quick, easy and tasty are my favourite 3 words

  • Set your slow cooker to medium heat
  • Heat a pan with olive oil on a medium high heat and brown off the chicken on both sides, then set aside.
  • Add all ingredients to the slow cooker apart from the garnish ingredients and the butter.
  • Add the chicken and mix through thoroughly.
  • Cook for 4-6 hours stirring occasionally.
  • When ready to serve, stir through butter, garnish with coriander and almonds, and serve with you choice of rice and a flatbread.
