  • 8 shallots, peeled
  • bulgur wheat for two
  • 150 g frozen peas
  • small bunch of fresh thyme
  • a quater of a pack of feta cheese
  • a sprinkling of chilli flakes
Braised Shallots with Bulgur Wheat
A lovely little meat free meal... perfectly balanced and seriously tasty!

I do hate peeling shallots! But grin and bear it, becuase they are so worth it... especially slow braised like this. And combined with the bulgur wheat, peas, feta and fresh thyme, this is absolutely melt in the mouth.

  1. Start with the shallots, tossed in some virgin olive oil with a sprinkling of coarse sea salt and black pepper. Transfer to a baking dish with a few sprigs of fresh thyme and pour in about 200ml of vegetable stock - you just want a little liquid at the bottom of the dish, not covering the shallots. Braise in a moderate to hot oven (180 - 200 degress) for about 30 mins, until the shallots are nice and soft and slightly charred
  2. Whilst they're in the oven, cook enough bulgur wheat for two - following the instructions on the pack for quantities and cooking time. At the same time, get your peas on and boil for just a minute and then refresh in cold water. Drain the bulgur wheat, refresh in cold water and set aside with the peas
  3. Finally, transfer the bulgar wheat and peas to a pan, add in the shallots, along with all the cooking liquid and warm everything through. Finish with a sprinkling of feta cheese and chilli flakes
