  1. Preheat oven to 200℃, line a baking tray with greaseproof paper and set aside.
  2. Place a large frying pan over medium high heat. Grab the pork fillet, pat dry with kitchen paper and roll the pancetta around the pork fillet tightly. Place in the frying pan and sear all over for 3 mins. Once seared then transfer the fillet to the baking tray and place in the oven for 30mins.
  3. Meanwhile, to make the sauce. Add all the sauce ingredients to a blender, blend until smooth then transfer to a pan and heat on a low heat for 10 mins.
  4. Once pork is cooked, place on a chopping board for 5mins to rest then slice up and present it in a bed of of the red pepper sauce. Enjoy
