INGREDIENTS

  • 500 g boneless and skinless chicken thighs diced
  • 1 onion finely diced
  • 3 cloves garlic crushed
  • 1 tsp smoked paprika
  • 1 tbsp tomato puree
  • 1 400g tin chopped tomatoes
  • 300 ml chicken stock
  • 1 red pepper small dice
  • 1 green pepper small dice
  • 100 g green olives
  • 2 tbsps fresh parsley chopped

One Pot Spanish Chicken Stew

  1. Add a splash of oil into a pan then cook the diced chicken over a medium – high heat for 4-5 minutes until golden then remove from the pan and set aside.
  2. Fry the onion in a dash of oil for 5 minutes then add in the garlic and cook for a further few minutes. Add in the paprika and tomato puree then stir through to cook for a couple of minutes, pour in the chopped tomatoes and stock. Bring up to a simmer then add the chicken back in along with the olives and peppers, cook for a further 10-15 minutes. Garnish with fresh parsley.
