  • 2 trout fillets
  • 3 large slices of serrano ham
  • 2 cloves of garlic, peeled and finely chopped
  • half a small bunch of parsley, finely chopped
  • 1 tsp capers
  • jar of beetroot relish or pickled beetroot to serve

Fresh Cornish trout fillets teamed with crispy Serrano ham and served with a beetroot relish... delicious!

These lovely fresh Cornish trout fillets are the best of the morning's catch, shipped to my front door to be served in this super easy but seriously delicious dish! Serrano ham is a perfect accompaniment to most types of fish and when pan fried, it crisps up beautifully! If you've got a jar of homemade beetroot relish or pickled beeetroot, it's a fantastic accompaniment to this!

  1. Start with heating some oil in a frying pan and when it's hot, add in the serrano ham and fry for a few minutes on both sides, until it curls and crisps. Set aside on individual plates or a serving platter, somewhere warm (along with any small broken off bits)
  2. Then brush the tout fillets with some olive oil and (in the same pan) fry them over a moderate heat for just a minute or two each side. Transfer to the serving platter/plates with the ham
  3. Finally melt a knob of butter in the same pan again and add in the garlic and parsley, season and stir fry for a minute or so until the garlic starts to turn golden. Add in the capers, along with a little olive oil and a splash of lemon juice, spoon over the fish and serve straightaway!
