Ingredients
  • 2 sliced of sourdough
  • 1 avocado
  • 1 lime
  • 1 tsp chilli flakes
  • 2 eggs
  • 2 rashers smoked streaky bacon
  • Knob of butter
  • 1 tbsp chopped coriander
  • 1 tsp chilli oil
  • Salt
  • Pepper
Smoked streaky bacon, Guacamole, Scrambled eggs on Sourdough.
The perfect brunch...
  1. Start by making the Guacamole, cut the avocado in half and remove the stone. Using a spoon scoop out of the skin and place into a bowl. Smash the avocado up using a fork and then add the juice of 1 lime, the chopped coriander and the chilli flakes. Season with salt and pepper. 
  2. Mix together and place to the side. 
  3. Next up lightly toast your sourdough and spread on some butter. In a saucepan crack in the eggs with a knob of butter and place on a low heat. My motto for eggs is low and slow. 
  4. Using a plastic spatula keep stirring the eggs making sure they don’t catch on the bottom, after 2 minutes the eggs will start to come together. Take off the heat and stir for and then back on the heat for 30 seconds. Take off the heat and stir and then back on the heat for 30 seconds. 
  5. By doing this it will create the fluffiest scrambled eggs, one they are done season with salt and pepper then place on top of one of the slices of sourdough and do the same with the guacamole. 
  6. Place a frying pan onto a high heat and add the bacon, cook for 2 minutes on each side before placing on top of the scrambled eggs and guacamole. Finish with a drizzle of chilli oil.  I even add chopped coriander to my scrambled eggs as I feel like it really elevates them.
