Ingredients
Stock and Toppings
  • 1 Chicken stock melt
  • 4 tbsps Sriracha hot sauce
  • 2 tbsps Soy sauce
  • 1 tsp Fish sauce
  • 1 Heaped teaspoon Miso paste
  • 1 Heaped teaspoon Puréed ginger
  • 160 g Dried noodles
  • 1 Lime
  • 1 Handful coriander
  • 2 Soft boiled eggs
  • 4 Diced spring onions
  • ½ Sliced red onion
  • 1 Sliced chilli
  • 1 Small pak Choi
Chicken marinade
  • 2 tbsps Soy sauce
  • 1 Heaped teaspoon Puréed ginger
  • 3 Crushed garlic cloves
  • 1 Heaped teaspoon Dried chilli flakes
  • 2 Large chicken breasts

Cheats Chicken Ramen

Ramen is a true home comfort for me and this one is super easy to make. When I don’t have much time but really fancy this, this is my go to cheats ramen recipe.


  1. Prepare your chicken. Add your soy sauce, ginger, garlic and dried chilli flakes to a bowl and cover your chicken breasts. Pop the chicken onto a lined baking tray and into a preheated oven (180 degrees) for around 15-20 minutes. 
  2. Whilst your chicken is cooking, prepare your stock. Add the chicken stock melt to around 500ml boiling water along with the sriracha, soy sauce, fish sauce, puréed ginger and miso paste. Leave on a low heat to boil whilst the chicken is cooking. This will allow the flavours to infuse. 
  3. Get your toppings ready - slice your red onion, chilli and spring onions and leave to one side. Chop your coriander and lime and also leave to one side. 
  4. Soft boil two eggs - I like to do mine for 4.5/5 minutes to get the perfect yolk but cook for longer if you want a less runny yolk.
  5. Add your pak Choi to a frying pan with a little oil and soften, then leave to one side. 
  6. Your chicken should be nearly ready. Add your dried noodles to water and cook as per the instructions. The ones I use take around 3 minutes so done super fast! 
  7. Ensure your chicken is cooked and assemble. I start by adding the noodles to a bowl, covering in the stock then adding all toppings. Enjoy!
