Ingredients
  • 1 whole Dover sole, gutted, trimmed, scaled and deskinned
  • olive oil
  • coarse sea salt and freshly-milled black pepper
Garden Herb Vinaigrette
  • 6 tbsps olive oil
  • 2 tbsps white wine vinegar
  • 1 tsp caster sugar
  • good handful of fresh herbs (I used a combination of marjoram, oregano, parsley, rosemary, thyme and dill)
  • squeeze of lemon juice

Such a simple, but stunning dish! If you have access to a profusion of garden herbs, it's all you need to make this dish. Eaten with buttery new potatoes, it’s quite heavenly

  1. Brush the Dover sole with olive oil on both sides, then season well with coarse sea salt and some freshly milled black pepper. Lay on some parchment paper and grill under a moderate heat for about 15 mins, turning over halfway through
  2. Whilst it’s cooking (but keep an eye on it), make the herb vinaigrette: add all the ingredients to a hand blender and blitz until smooth
  3. Finally, transfer the fish to a serving platter, drizzle the dressing all over and give it a squeeze of lemon. Serve with some new potatoes, tossed in butter
