  • 2 tomatoes, whole
  • 1 red chilli, or 2 if you like it spicy
  • 2 cloves of garlic, skin on
  • ½ red onion, finely diced
  • 1 lime
  • Sea salt

Roasted Tomato Salsa

This really is the BEST salsa recipe! Roasting this way gives an amazing flavour to this side dish. Really simple and quick to make.


Prep 8 minutes
Total 15 minutes
  • In a frying pan dry roast the tomatoes, chillies and garlic. Let these blacken. Keep turning them so every side becomes charred.
  • Once charred, remove the skin from the garlic and the tomato, place into a pestle and mortar along with the chilli and bash up to be a paste.
  • Add the onion and squeeze in the juice of the lime.
  • Give it a little seasoning with flaked sea salt and serve.
