Tricolour Stovetop Coconut Quinoa

This hearty, nourishing breakfast is made with fluffy tricolour quinoa which is highly nutritious and packed with protein and high in fibre. Cooked with almond milk, cinnamon and desiccated coconut, this warming bowl of goodness makes as a delicious breakfast. Serve with toppings of your choice!


  1. In a pot, add the quinoa and 1 cup of almond milk and bring to a boil
  2. Turn down the heat, mix in the cinnamon and coconut, and leave to simmer, stirring occasionally and adding the rest of the 1/2 cup milk gradually whilst it's cooking
  3. Cooking for around 15-20 minutes, until the quinoa is cooked through and fluffy
  4. Divide into 2 portions and serve with toppings
