Spanish Tortilla

You can’t have a tapas spread without tortilla!

  • 4 large Maris Pipers
  • 1 large onion
  • 6 eggs, whisked
  • seasoning to taste
  • 2 tbsps extra virgin olive oil

Spanish Tortilla

You can’t have a tapas spread without tortilla!

  1. Use a mandolin to finely sliced your potatoes and onions. Pat the potatoes dry.
  2. Add oil to a medium frying pan and heat to medium. Add the potatoes and onions and give a quick stir to coat in the oil. Turn the heat to medium low and cook undisturbed for 15 minutes.
  3. Using a fish slice, flip the mixture in chunks. Keeping the heat medium low, cover the pan and cook for around 20 - 30 minutes, flipping once or twice, until everything is cooked through and soft.
  4. Season your eggs to your taste, then add to the pan. Cook for around 10 minutes until the bottom is done and the edge can easily be moved from the side of the pan.
  5. Hold a large plate over the mix and use to flip out the tortilla. Then slide it back into the pan so the side that was on the bottom is now upright. Cook for a further 5 minutes before flipping onto a clean plate and serving.
