  • 500 ml Chicken or Vegetable Stock (Hot)
  • 2 tbsps Olive Oil

  • Salt and Pepper

Greek Lemon Potatoes

Oven cooked potatoes in stock with lemon, garlic & oregano

All the lovely flavours of the stock are absorbed by the potatoes in this easy dish. Great accompaniment to fish or meat.

Total 1 hour 20 minutes
  1. Cut the potatoes into chunky wedges. Place in a single layer in an oven proof dish
  2. Mix together the remaining ingredients in a jug and pour over the potatoes.
  3. Cover the dish with with foil and cook for 40 minutes at 220℃ /200℃ fan/ Gas 7
  4. Uncover the potatoes and carefully turn in the stock
  5. Cook uncovered for a further 30 minutes until golden and tender.
