Ingredients
  • 90 g of oats
  • 1 banana
  • 2 eggs
  • 120 ml of cashew milk (or your dairy alternative – I use almond milk in mine to keep them dairy free)
  • 1 Big squeeze of honey
  • Coconut oil
  • Optional topping ideas – Fruit, mixed nuts, dark chocolate, honey, peanut butter, dates, melted chocolate, seeds.

Healthy pancakes

This recipe is so simple and absolutely delicious. What better way to start the day with some healthy pancakes loaded with your favourite toppings. I would recommend adding some mixed nuts and peanut butter along with some mixed fruit and a drizzle of honey.

Total 15 minutes
  1. Add the oats, banana, eggs, almond milk and honey to a blender and blitz until smooth
  2. Heat a big frying pan until hot on a medium - low heat.
  3. Once the pan is hot, add the coconut oil and distribute the mixture evenly creating 4 pancakes or one large one
  4. Cook for about 1 minute or until bubbles start to appear on the surface of the pancake then flip over and cook for a further 30 seconds.
