  • 1 pack of sausages
  • 2 big peppers
  • 1 onion
  • 1 mozzarella ball
  • 1 tsp sundried tomato paste
  • ½ tsp minced chilli
  • 3 tbsps mayo
  • Fresh basil
Spices
  • 2 cloves crushed garlic
  • 2 tsps oregano
  • 1 tsp dried parsley
  • ½ tsp chilli flakes
  • 3 tbsps Olive oil
  • 1 tbsp red wine vinegar
  • salt and pepper

Sausage and Pepper Tray Bake


  1. Mix the spices with the oil and pour over the sliced peppers and onions. Add this to a baking dish.
  2. If using pork/meat sausages, add these to the peppers and bake at 180℃ for 40 minutes uncovered. If using veggie sausages, bake the peppers and onions and fry the sausages - you can add them in at the end.
  3. Once the peppers and sausages are cooked (or if using veggie ones, once the peppers are cooked add the sausages in), add torn mozzarella to the pan and back in the oven for about 10 minutes
  4. Mix the sun dried tomato paste, mayo and chilli together and dollop over the sausages and peppers
