Mediterranean Chicken Kebabs

It is always easy and fun to make chicken skewers. Marinate the chicken pieces with warm Mediterranean spices and flavours, grill them and your lunch/ dinner is ready! Serve these delicious juicy kebabs with salad or pitta bread. They are great for mid-week meals.

ingredients

Chicken Marination

  • Boneless chicken thighs: 600 gm
  • garlic powder/granules: 1 tsp
  • Onion powder: 1/2 tsp
  • Paprika: 1 tsp
  • Pepper powder: 1/4 tsp
  • Chilli flakes: 1 tsp
  • Cayenne powder: 1/4 tsp (optional)
  • Turmeric powder: 1/3 tsp
  • Cumin powder: 1/2 tsp
  • Mixed spices powder: 1/2 tsp
  • Sumac: 1 tsp
  • Salt: 1 tsp
  • Yogurt: 2 tbsp
  • Olive oil: 2 tbsp
  • Chopped parsley: 2 tbsp
  • Chopped mint leaves: 3 tbsp
  • Lime juice: 1 tbsp

Mediterranean Chicken Kebabs

It is always easy and fun to make chicken skewers. Marinate the chicken pieces with warm Mediterranean spices and flavours, grill them and your lunch/ dinner is ready! Serve these delicious juicy kebabs with salad or pitta bread. They are great for mid-week meals.

Step 1:

Cut the chicken thighs into 2 inch pieces.

Step 2:

In a large bowl, add all the ingredients written under 'chicken marination', mix well, cover with cling film and marinate for at least 30 minutes.

Step 3:

If you are using wooden skewers, soak them for a while.

Step 4:

Pre-heat the oven at 180c fan.

Step 5:

Skewer the chicken pieces and place them on grilling rack. Grill them for 15 minutes. Flip and cook them for final 2 minutes. Kebabs are ready!
