  • spaghetti for two
  • 1 small red chilli, finely chopped
  • 4 cloves of garlic, finely chopped
  • large knob of butter
  • 1 kg fresh clams
  • 200 ml white wine
  • small handful of parsely stalks, finely sliced
  • 200 ml fresh double cream
  • fresh, crusty bread for dipping!
Creamy Clams with Spaghetti!
My take on the classic Italian dish Spaghetti Alla Vongole, this is truly sublime
Creamy Clams with Spaghetti! Creamy Clams with Spaghetti!

A simple treat that will immediately transport you to the Italian peninsula and the mediterranean way of life. It combines garlic, chilli, white wine and cream for a delicious sauce. Make sure you have some lovely fresh bread to mop it all up!

  1. Start with the spaghetti and follow the istructions on the pack for quantities and cooking times
  2. Whilst it's cooking, melt the butter in a pan and add in the garlic and chilli and fry over a moderate heat for a few minutes before adding in the clams and the wine. Bring to the boil, reduce to a rapid simmer and cook for three to four minutes, until the clam shells open (discard any that don't)
  3. Finally drain the spaghetti and add in with the clams and the parsley stalks. Season, give everything a good shake and finish with the cream. Warm through and serve with some nice crusty bread
