- Combine the red onion, chilli, mango and fresh coriander in a small mixing bowl. Add the lime juice, salt and a good pinch of freshly-ground black pepper and toss to combine. Add the avocado and toss gently to combine. Taste and season with extra sea salt and freshly-ground black pepper, if necessary, then serve.
STORAGE: This salsa is best served fresh but will keep in the fridge for up to 2 days.
