  • 2 tbsps Balsamic vinegar
  • 2 tbsps Honey
  • 50 g Feta
  • 50 g Greek yoghurt
  • 2 Slices of sourdough, toasted
  • 4 Basil leaves, sliced into thin strips

Whipped Feta, Roast Balsamic & Honey Strawberries on Toasted Sourdough

The perfect little brunch dish that will brighten up your breakfast table!

Total 35 minutes
  • Toss the chopped strawberries in the balsamic vinegar and honey and place in a baking tray. Roast in the oven at 175℃ for 30 minutes
  • Meanwhile, add the feta and greek yoghurt to a small food processor and blitz until smooth. If its too thin add a touch more feta, if its too thick add more greek yogurt.
  • Once the strawberries have roasted leave to cool a little in their juices.
  • Toast the sourdough, spread a thick layer of the whipped feta and top with the strawberries.
  • Garnish with the fresh basil and pour over a little of the extra juices just before serving.
