Crunchy Veggie Asian Quinoa Salad with a Spicy Peanut Dressing

An addicting combination of crisp vibrant veggies and fluffy quinoa doused in a creamy, spicy peanut dressing… what’s there not to love?? ♥️

This is one for all you non salad lovers out there… seriously… if this beautifully textured salad doesn’t covert you then I don’t know what will!!

The star of the show is the dressing… nutty, tangy, savoury and spicy… I could happily eat this all year round… such an easy one… add some tofu, salmon, chicken or prawns if you want to bulk it up but this one is just gorgeous simply on it’s own.

  1. Cook quinoa according to packet instructions, set aside
  2. Blitz all dressing ingredients in a food processor until it forms a runny consistency
  3. Add all salad ingredients to a bowl and mix well
  4. Drizzle with the peanut dressing, garnish with toasted sesame seeds and chopped red chillis
  5. Enjoy!
