Spicy Basil Chicken Lettuce Wraps

  1. Wash and pat dry the lettuce leaves and keep them aside.
  2. Mix the ingredients for the Dipping Sauce and keep that aside for later.
  3. Heat 1 tbsp of oil in a wok and add the finely chopped of the green onions (white parts) along with the finely minced garlic and red chilies and sauté them for a couple of minutes.
  4. Add the ground chicken and continue frying it on high heat and break up the bigger clumps to ensure it gets cooked evenly. Add the remaining ingredients for the sauce - Soy sauce, chili sauce, oyster sauce and fish sauce and mix everything well so that the ground meat gets seasoned properly.
  5. Continue cooking the ground chicken on medium-high heat till the chicken gets cooked properly and keep stirring constantly to get a good even sear on the meat. The caramelized and crumbly bits of ground chicken are the most delicious bits.
  6. Scoop the spicy basil chicken into the lettuce cups and then garnish it with chopped green onions and fresh mint leaves.
