Flaky Chinese Scallion Pancakes

蔥油餅 Cong You Bing

The alternative to enjoy Pancake Day, if you're vegan/veggie, or just want to try something other than classic pancakes. Fragrant and totally moreish with that tangy dip. I looove this and I always make this in batches to freeze so I can have more another time.

  1. Prepare the dough, by slowly adding the water to the flour while mixing, and knead to form a rough dough. Cover with a damp towel and rest this for 30 mins.
  2. While the dough rests, prepare the filling. Finely chop the spring onions and place in a bowl. In a separate bowl, mix the flour and oils together until smooth paste.
  3. After the dough is rested, knead for a few mins until smooth. Divide this into 4 equal pieces.
  4. With a rolling pin, take a piece and roll this out on a flour-dusted surface until large and thin. Spread some of the flour paste evenly on the dough, and sprinkle a handful of spring onions on top. Season generously with salt and Chinese five spice.
  5. Roll up this piece of dough tightly into a log. Once a log is formed, roll the log into itself to form a swirl, similar to a danish. Set aside while you repeat this process for the other pieces of dough.
  6. Once all the dough swirls have been made, take one and flatten it with your hand. With a rolling pin, roll this out into a flat pancake. Repeat for the other pieces.
  7. To cook, heat up a frying pan with oil on high heat. Once hot, place the pancake flat in the pan and cook until golden brown and then flip over. You may need to adjust the heat to medium low once flipped over prevent it burning the outside. Total cooking time should be around 10 mins.
  8. Serve piping hot with some dipping sauce. Enjoy!
