  • 1 Avocado
  • 2 Cloves of garlic
  • A squeeze of lemon juice

  • Handful of walnuts
  • Cathedral City Vintage Cheddar to taste
  • 2 tbsps Olive oil

Avocado pesto
A quick fridge raid but so delicious

I threw this together one evening when I really wanted some pesto but didn't have all the necessary ingredients. I improvised by using what I had and utilised an avocado for my base rather than basil (as my plant didn't have enough on it).


I made pesto pasta with this but it would have gone really well with nachos too.

Prep 5 minutes
Total 5 minutes
  1. Put all the ingredients except the water into a food processor and blitz!
  2. Once everything has been chopped finely, check the consistency, if it is too thick add a little water.
  3. Taste the flavours and make any necessary adjustments.
  4. Serve!
