Salmon Lemon and Pesto Gnocchi Bake

Easy one pan gnocchi bake, throw in old vegetables and you're good to go!


  1. Heat up the oven to 200 degrees. Chop up all the vegetables and place into an ovenproof dish. Boil the Gnocchi for 2 minutes and then drain.
  2. Mix the pesto, creme fraiche and lemon juice into a bowl.
  3. Mix the pesto mixture to the vegetables, add seasoning of your choice and place into the oven for 35 mins.
  4. After 12 minutes heat some oil into a pan with garlic and chilli, once hot add the salmon and cook for 10 minutes. Take the dish out of the oven and place the salmon on top and add 1/2 of the parmesan.
  5. Once cooked add the rest of the parmesan and serve with garlic bread. Enjoy!
